Before salting, each fillet of salmon has its pin bones removed. It is then hand cured in salt for 6 hours. Following the salting process the salmon is then rinsed and racked. Our salmon is smoked using the finest oak chippings for 6 hours (see picture below). Finally, the salmon is allowed to cool down for 36 hours before it is hand sliced and vacuum-packed. However, your salmon can be sliced or unsliced depending on your preference.
